Shrimp is the busy cook’s best friend, since it cooks in less than 5 minutes. It’s a nutrient powerhouse, too—high in B vitamins, protein, zinc, choline and iodine. Just 3 ounces of shrimp provides 77% of your daily value of selenium <—an essential cofactor to make our most important antioxidant, glutathione.
This dish is great over rice or rice noodles (cauliflower rice or shirataki noodles for paleo folks). Enjoy!
