I learned to make this while working at a fancy shmancy retreat center in Los Angeles. The guests went crazy for them! The best part is, they couldn’t be easier. I turn to these whenever I want a decadent chocolate treat (which is often) but I can’t be bothered to turn my oven on.
Ingredients:
Brownie base
- 1 cup cashews
- 1 cup pitted dates
- ⅓ cup raw cacao powder
- Pinch of sea salt
Icing
- 1 avocado
- 3 tablespoons maple syrup
- 1 tablespoon coconut oil
- 3 tablespoons cacao powder
- 2 teaspoons vanilla
- Pinch of sea salt
- Pinch of cinnamon
Directions:
Combine brownie base ingredients in a food processor and blend until mixture resembles dirt. Press into an 8×8 pan. Rinse and wipe out food processor.
Combine icing ingredients in a food processor and blend until smooth.
Spread icing over the brownie base and place in freezer for 1 hour.
Cut into squares and enjoy! Store leftover brownies in the refrigerator for up to 5 days.
