Grain Free Tahini Coconut Granola
Use whatever nuts you have on hand for this versatile recipe. My favorites are pistachios, pecans, and walnuts.

INGREDIENTS
½ cup pistachios
½ cup pecans
½ cup walnuts
½ cup unsweetened coconut flakes
1 tablespoon chia seeds
2 tablespoons maple syrup
2 tablespoons tahini
1 tablespoon coconut oil
¾ teaspoon kosher sea salt
¼ teaspoon cinnamon

Preheat oven to 300°F. Line a rimmed baking sheet with parchment paper. Toss nuts, coconut flakes, and chia seeds in a large bowl. Stir together maple syrup, tahini, coconut oil, salt, and cinnamon in a medium bowl.

Pour tahini mixture over nuts and toss with a spatula until evenly coated. Spread onto baking sheet. Bake 15 minutes, then remove from oven and toss. Bake another 15 minutes, toss, and return to oven for a final 5-10 minutes. Granola is done when coconut flakes are lightly browned (granola will continue to crisp as it cools)
